Mom’s Best Crispy Chocolate Dipped Oat Cookies
½ cup unsalted butter
½ cup brown sugar
½ cup white sugar
½ tsp vanilla
1 cup flour
½ tsp baking soda
¼ tsp baking powder
1 cup Mom’s Best® Old Fashioned Oats
1 cup corn flakes
½ cup coconut
1 cup chocolate chunks
1 package Dark Chocolate Melting Wafers
- Preheat the oven to 350°. Meanwhile, In a large bowl or stand mixer, cream butter and both sugars until light and fluffy. Beat in egg and vanilla. Gradually add the flour, baking soda, baking powder and mix well. Stir in the Mom’s Best® Oats, cereal and coconut.
- Drop spoonfuls of the mixture on baking sheets. Bake at 350° for about 9 minutes, or until golden brown. Cool on wire racks.
- Melt dipping chocolate according to directions on the package (usually 30 second intervals of defrost power in the microwave).
- Dip one third to one half of each cookie in the melted chocolate, place on parchment paper to harden. Once the chocolate is set, enjoy or store in a place where they will not get too warm and melt.
